Rudy's exposure to both northern and southern cuisine paved the way for Mang Rudy's restaurant. Hailing from Tarlac, he mastered Ilocano specialties and learned recipes from the southern region during his family's time in Davao.

With his love for cooking, Mang Rudy developed a diverse menu, but his best-selling specialties remained tuna and papaitan.
